Zakusochniy

Cheese Type: Soft

Country: Russia

Milk Type: Cow

Zakusochniy takes its name from the Russian word zakuski, the array of small savory dishes traditionally served alongside vodka at the start of a meal. The cheese was made expressly for that role, and its character reflects that purpose.

Flavor Profile

Zakusochniy is a semi-soft cheese with a smooth, supple paste. The flavor is savory and moderately tangy with a pronounced salty edge, built to stand up alongside pickles, cured fish, and spirits rather than to be eaten alone. There is a mild pungency and an earthy depth that develops with age.

How to Serve

Serve it as intended, cubed or sliced on a zakuski platter with pickled vegetables, smoked fish, cured meats, and dark bread. It also melts adequately for hot open-faced sandwiches. Its saltiness means it needs little seasoning support.

Pairing Suggestions

Pair with chilled vodka in the traditional manner, or with a dark lager or a robust red. Serve with pickled cucumbers, smoked fish, rye bread, and fresh dill.

Storage

Wrap in wax paper and store in the refrigerator. Best consumed within two to three weeks of cutting.
