Gouda, Flavored

Cheese Type: Firm

Country: Netherlands

Milk Type: Cow

Flavored Gouda covers the wide family of Dutch cheeses in which herbs, spices, or other ingredients are blended into the curd before pressing. The Netherlands has done this for centuries, and the range now includes cumin, nettle, mustard seed, fenugreek, garlic, onion, and many others.

Flavor Profile

The Gouda base is consistently mild, smooth, and buttery, which is precisely why it works so well as a carrier. It supports added flavors without competing against them. Depending on the inclusion, the result can be warm and earthy from cumin, sharp and pungent from mustard seed, or herbaceous and green from nettle.

How to Use

Cube flavored Goudas for platters, where their variety and visible inclusions create interest. They melt well, adding an easy flavor boost to sandwiches, omelets, and baked dishes. On a board, offering two or three varieties side by side makes an effective tasting.

Pairing Suggestions

Pair according to the inclusion: cumin varieties with a Riesling or wheat beer, herb varieties with a Sauvignon Blanc, mustard varieties with a malty ale. Serve with dark bread, mustard, and pickles.

Storage

Wrap in wax paper and store in the refrigerator crisper drawer. Keeps well for three weeks.
