Ingredients

  • 2 TB butter divided
  • 2 TB canola oil divided
  • 6 cups defrosted frozen shredded potatoes
  • 2 teaspoon kosher salt divided
  • 1/4 teaspoon pepper divided
  • 2 cups shredded imported Raclette divided
  • Optional: Sour cream and chopped fresh herbs for garnish chives, scallion or parsley

Instructions

  • In a 9 inch nonstick skillet, melt 1 TB butter with 1 TB oil over medium heat. Spread half the potatoes in an even layer. Season with 1 teaspoon salt and 1/8 teaspoon pepper. Sprinkle the potatoes with 1 ½ cups grated imported Raclette cheese, then top with the remaining potatoes. Season with remaining 1 teaspoon salt and 1/8 teaspoon pepper. Using a spatula, press the mixture gently into the skillet to smooth the top.
  • Cook for about 7 minutes or until the bottom is well browned.
  • Remove from the heat and use a spatula to gently loosen the Rösti from the side of the skillet. Carefully place a large platter or wooden board on top of the pan and flip the Rösti out of the pan.
  • Return your skillet to medium heat and add the remaining 1 TB butter and 1 TB oil. Slide your Rösti back into the skillet, cooked side up. Sprinkle the top with the remaining ½ cup shredded imported Raclette. Cook your Rösti until the bottom is browned and the Raclette cheese is melted, about 5-7 more minutes.
  • Slide your Rösti onto a serving platter and cut into wedges. If desired, serve topped with optional sour cream and parsley, chives, or dill.
