Spanish Manchego & Serrano Party Bites

Bring a taste of Spain to your next party with these easy to make appetizers! The classic pairing of rich, nutty imported Manchego, savory Serrano ham, and lightly sweet-tart Membrillo quince paste is combined into a delectable filling for crisp little tarts. You may want to double this recipe because these are sure to go fast!

Ingredients
  

  • 2/3 cup shredded imported Manchego cheese, divided
  • 2 oz errano ham or prosciutto, chopped
  • 1 Tbsp membrillo (quince paste)
  • 1 tsp minced fresh sage, additional for garnish
  • 1 package mini filo shells (in your grocer's freezer case)

Instructions
 

  • Preheat oven to 350 degrees and line a baking sheet with foil. Combine 1/2 cup imported Manchego cheese, ham, membrillo, and sage in a mini chop food processor. Season with a pinch of salt and pepper and pulse to combine. (Or combine in a bowl and lightly mash with a fork to mix in quince paste.) 
  • Place filo shells on prepared pan and fill with cheese mixture. Sprinkle with remaining cheese and bake for 5 minutes or until warmed through. Garnish with additional chopped sage and serve.
  • Tip: You can make these up to 1 day ahead - just be sure to bake them when ready to serve.
