The classic pairing of rich, nutty imported Manchego, savory Serrano ham, and lightly sweet-tart Membrillo quince paste is combined into a delectable filling for crisp little tarts. 1packagemini filo shells (in your grocer's freezer case)
Preheat oven to 350 degrees and line a baking sheet with foil. Combine 1/2 cup imported Manchego cheese, ham, membrillo, and sage in a mini chop food processor. Season with a pinch of salt and pepper and pulse to combine. (Or combine in a bowl and lightly mash with a fork to mix in quince paste.)
Place filo shells on prepared pan and fill with cheese mixture. Sprinkle with remaining cheese and bake for 5 minutes or until warmed through. Garnish with additional chopped sage and serve.
Tip: You can make these up to 1 day ahead - just be sure to bake them when ready to serve.
