Treat your friends to some Southern hospitality with our twist on the classic, savory cheese and pepper spread. Our combo of rich Red Leicester and so-creamy Mascarpone lends an extra lux.

  • 2 cups fresh grated imported Red Leicester cheese
  • 1/2 cup imported Mascarpone cheese
  • 6 TB finely chopped jarred pimiento peppers rinsed and dried well
  • 1/4 cup mayonnaise
  • 2 TB minced onion
  • 1 1/2 tsp Dijon mustard
  • 1/4 tsp Worcestershire sauce
  • pinch each salt pepper, cayenne
  • optional chives for garnish


  • Stir all ingredients together well to combine and season to taste.
  • May be made up to 3 days ahead and keeps well in the refrigerator up to 1 week.
  • Yields: 1 1/2 cups to serve 6-8
