Ingredients

  • 1 TB butter
  • 1 large Granny Smith apple peeled and diced
  • 1 small shallot minced
  • 1 TB chopped fresh thyme
  • 2 TB dark brown sugar
  • ½ tsp cinnamon
  • ½ tsp lemon juice
  • ¾ cup grated imported Smoked Gouda cheese
  • 1 package refrigerated pie crust 2 crusts
  • 1 egg beaten
  • 1 TB milk

Instructions

  • Melt butter over medium heat in a small saute pan, Add apple and shallot and cook for 3-5 minutes or until softened. Stir in thyme, brown sugar, cinnamon, and lemon juice. Remove to a bowl and cool in the refrigerator for a half hour.
  • When cool, preheat your oven to 375 degrees and line a baking pan with parchment paper. Stir grated imported Smoked Gouda cheese into the chilled apple mixture.
  • On a wax paper or parchment lined surface, unroll your 2 pie crusts. Using a 3 ½” circle cutter or coffee mug, cut 8 rounds of dough out of each roll of pie crust for a total of 16 rounds.
  • Arrange 8 rounds on your prepared baking pan. Spoon 2-3TB apple filling in the center. Cut small slits into the remaining 8 rounds of pie dough (to vent while cooking) and place each one on top of your apple filling to cover. Press around the edges to seal the top to the bottom, then go around edges with the tines of a fork to crimp. Beat together your egg and milk in a small bowl and brush over the top of each hand pie.
  • Bake hand pies for 30 minutes, rotating pans once halfway through cooking, until crusts are well browned. Serve warm or at room temperature
