7cupsshredded potatoesfresh, refrigerated, or frozen
8ozcream cheese at room temperature
2cupsshredded imported Cheddar Cheesedivided
Salt and pepper to taste
Optional crumbled bacon for garnish
Preheat your oven to 350 degrees. On a stovetop in an ovensafe 9” cast iron skillet heat olive oil over medium heat. Cook onions for 5-8 minutes stirring frequently until softened. Add garlic and cayenne and cook for 1 minute. Stir in potatoes and cook for 5 minutes.
In a large bowl mix together sour cream, cream cheese, and 1 ½ cups imported Cheddar Cheese. Spoon into warm skillet and stir to fully combine. Bake for 20 minutes or until browned, top with reserved ½ cup shredded cheddar cheese and return to the oven to melt
Garnish with scallions and crumbled bacon and enjoy!
