
Skillet Cheddar, Potato and Onion Dip
This cozy, hearty dip comes together in no time and is perfect for parties or casual events. Rich, melty, imported Cheddar cheese is the secret to its amazing flavor! Serve with baby peppers or crostini for a crunchy contrast.
Ingredients
- 2 TB olive oil
- 2 large onions chopped
- 1 TB minced garlic
- Pinch cayenne pepper
- 7 cups shredded potatoes fresh, refrigerated, or frozen
- 8 oz cream cheese at room temperature
- ½ cup sour cream
- 2 cups shredded imported Cheddar Cheese divided
- Salt and pepper to taste
- ⅓ cup chopped scallions
- Optional crumbled bacon for garnish
Instructions
- Preheat your oven to 350 degrees. On a stovetop in an ovensafe 9” cast iron skillet heat olive oil over medium heat. Cook onions for 5-8 minutes stirring frequently until softened. Add garlic and cayenne and cook for 1 minute. Stir in potatoes and cook for 5 minutes.
- In a large bowl mix together sour cream, cream cheese, and 1 ½ cups imported Cheddar Cheese. Spoon into warm skillet and stir to fully combine. Bake for 20 minutes or until browned, top with reserved ½ cup shredded cheddar cheese and return to the oven to melt
- Garnish with scallions and crumbled bacon and enjoy!
