
Melon and Goat Cheese Salad with Pickled Onion Vinaigrette
This gorgeous Mediterranean inspired salad is perfect for summer parties and a fun twist to try! Juicy watermelon, honeydew, & cantaloupe are combined with crunchy radishes, cucumbers, olives, mint and a quick pickled onion vinaigrette. A generous topping of crumbled imported Goat Cheese adds the perfect creamy-tart finish!
Ingredients
- 1 red onion small
- 2 tbsp lime juice
- 1 tsp sugar
- 5 cups arugula
- 3 cups cubed watermelon
- 3 cups cubed cantaloupe
- 3 cups cubed honeydew
- 1 cup baby radishes halved
- 3 Persian cucumbers sliced into 1” chunks
- 3 TB olive oil
- salt & pepper to taste
- ⅓ cup pitted Kalamata olives
- ½ cup torn fresh mint
- 8 oz crumbled imported goat cheese
Instructions
- Toss onion, lime juice, and sugar together in a small bowl & let sit for 10-15 minutes to soften onion. Place arugula on a large serving platter and arrange melon, radishes & cucumber in a pretty pattern. Top with pickled onion mixture and olive oil. Season to taste with salt and pepper. Garnish with olives and mint. Top with goat cheese and enjoy!
