
Mediterranean Grilled Halloumi Burgers
These hearty vegetarian burgers have incredible flavor and texture thanks to unique and versatile Halloumi cheese. Made from a combination of cow’s milk, goat’s milk and sheep’s milk, Halloumi is a creamy, springy textured cheese from Cyprus that holds up to grilling it or pan frying. We top ours with an easy olive topping and grilled peppers for a taste of the Mediterranean in every bite.
Ingredients
- 1 cup pitted Castelvetrano olives
- 2 garlic cloves
- 3 TB parsley
- 1 small red chili or 1 tsp hot pepper flakes
- ½ cup mayonnaise
- 1 TB hot sauce
- 2 red peppers deseeded and cut into large chunks
- 2, 8 oz blocks imported Halloumi cheese each split crosswise into 2 planks for a total of 4
- 2 TB olive oil
- 1 tsp cumin
- Romaine lettuce leaves or arugula for topping
- 4 ciabatta or brioche buns
Instructions
- Combine olives, garlic, parsley, and chili in a small food processor and pulse to combine. (If you don’t have a food processor just coarsely chop the ingredients together or purchase storebought olive tapenade).
- Whisk together the mayonnaise and hot sauce and reserve. Toss peppers and Halloumi in a large bowl with olive oil and cumin. Coat a grill or grill pan with oil and heat over high heat. Grill peppers and Halloumi for 4-5 minutes per side or until well charred and peppers are slightly wilted.
- Arrange buns on a plate and spread with mayonnaise mixture, layer with olive topping, grilled Halloumi and peppers, and lettuce leaves. Enjoy!
