
French Lentil Salad with Tarragon, Cranberry, and Goat Cheese
This French bistro inspired dish combines savory lentils, sweet cranberries, and rich, creamy-tart imported Goat Cheese tossed in a super-flavorful tarragon vinaigrette. It’s the perfect hearty lunch or side dish to pair with roast chicken, duck, or pork and can be enjoyed warm or chilled.
Ingredients
- 2 cups French lentils cooked according to package directions and well drained
- 1 cup diced celery
- 4 chopped scallions
- 1/2 cup dried cranberries
- 2/3 cup crumbled imported Goat Cheese more for garnish
- 2 cups arugula or baby kale
Tarragon Vinaigrette
- 2 TB champagne or cider vinegar
- 1 small shallot minced
- 1 TB chopped tarragon
- 1 1/2 tsp dijon mustard
- 1 tsp kosher salt
- 1/4 tsp black pepper
- 3 TB olive oil
Instructions
- In a large bowl combine cooked lentils, celery, scallions, cranberries, goat cheese, and arugula. In a small bowl whisk together all Tarragon Vinaigrette ingredients. Pour over lentil mixture and toss to combine. Serve garnished with additional goat cheese.
