French Lentil Salad with Tarragon, Cranberry, and Goat Cheese

Ingredients
  

  • 2 cups French lentils cooked according to package directions and well drained
  • 1 cup diced celery
  • 4 chopped scallions
  • 1/2 cup dried cranberries
  • 2/3 cup crumbled imported Goat Cheese more for garnish
  • 2 cups arugula or baby kale

Tarragon Vinaigrette

  • 2 TB champagne or cider vinegar
  • 1 small shallot minced
  • 1 TB chopped tarragon
  • 1 1/2 tsp dijon mustard
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • 3 TB olive oil

Instructions
 

  • In a large bowl combine cooked lentils, celery, scallions, cranberries, goat cheese, and arugula. In a small bowl whisk together all Tarragon Vinaigrette ingredients. Pour over lentil mixture and toss to combine. Serve garnished with additional goat cheese.
