Easy Spanakopita Bites with imported Feta

These easy, savory party bites are inspired by a classic Greek dish combining layers of crispy filo dough, sautéed spinach, dill, and most importantly creamy, tangy imported Feta cheese! Our adorable mini version uses pre-made filo shells from your supermarket freezer case to slash prep time.

Ingredients
  

  • 1 tsp olive oil
  • 1 shallot minced
  • 1 clove garlic minced
  • 5 oz frozen spinach defrosted and pressed dry (about 2/3 cup)
  • 1/4 tsp kosher salt
  • Pinch black pepper
  • 1 egg beaten
  • 2 TB chopped fresh dill
  • 1/3 cup crumbled imported Feta cheese additional for garnish
  • 1 package 15 pre-made frozen filo shells

Instructions
 

  • Preheat your oven to 350 degrees. Place oil in a small saute pan set over medium-low heat. Cook shallots for 3 minutes to soften, add garlic and cook for an an additional minute. Remove from the heat and stir in spinach, salt, and pepper. In a small bowl, combine spinach mixture with egg, dill and feta cheese. Fill filo shells with mixture, topping with additional crumbled Feta. Place on a baking pan and bake for 15 minutes or until lightly browned. Enjoy warm or at room temperature
