Cosmopolitan Brie Dip

  • For sugared cranberries:
  • 1 3/4 cups sugar divided
  • 3/4 cup water
  • 2 cups fresh or frozen cranberries
  • For dip and assembly:
  • 1 8-ounce imported brie wheel
  • 2 cups fresh or frozen cranberries
  • 1/2 cup sugar
  • 2 ounces orange liqueur
  • 1 lime zested and juiced, plus 1 lime, thinly sliced into rounds, for garnish
  • Assorted crackers for serving
  • 1 baguette cut diagonally into 1/4-inch slices, toasted
  • For sugared cranberries: Bring 3/4 cup sugar and water to a boil in a small saucepan about 3 to 5 minutes. Remove from heat and stir in cranberries. Let sit until syrup cools completely, about 30 minutes.
  • Place remaining sugar in a small bowl or plate. Pat cranberries dry with a paper towel. Roll cranberries in sugar until coated. Transfer to a paper-towel-lined rimmed baking sheet. Let sit at room temperature until cranberries are completely dry.
  • For dip and assembly: Score a diamond pattern on top of the brie wheel with a sharp knife. Place brie in a small round baking dish or oven-safe plate. Bake until brie is melted about 8 to 10 minutes.
  • Meanwhile bring cranberries, sugar, orange liqueur, lime zest and lime juice to a boil in small saucepan over medium-high heat. Reduce heat to medium and simmer until cranberries burst and a thick sauce forms, about 8 to 10 minutes.
  • Top baked brie with warm cranberry sauce and garnish with sugared cranberries and lime rounds. Serve with crostini and toasted baguette slices.

  • 4 stalk celery cut into sticks
  • 2 cups pickled green beans
  • 1 baguette cut diagonally into 1/4-inch slices, toasted
  • Beat Neufchatel cheddar, mayonnaise, tomato paste, horseradish, vodka, Worcestershire sauce, hot sauce and celery salt together using an electric hand mixer in a large bowl until well combined. 2. Divide dip evenly among cocktail glasses or glass bowls. Thread olives onto cocktail picks. Serve dip with celery sticks, olives, green beans and toasted baguette slices.
