Swiss – France

Cheese Type: Semi Hard

Country: France

Milk Type: Cow

French Swiss refers to Emmentaler-style cheese produced in France, most notably Emmental de Savoie and Emmental Grand Cru from the Franche-Comté and Savoie regions. France is in fact one of the largest producers of Emmental-style cheese in the world.

Flavor Profile

French Emmental is firm and elastic with the signature large round eyes formed by gas-producing bacteria during maturation. The flavor is mild, buttery, and gently sweet with a clean nutty finish. French versions often carry a slightly more pronounced fruity note than their Swiss counterparts, and the paste tends toward a deeper gold.

How to Use

This is a workhorse cheese in French kitchens. It melts smoothly and is grated over gratins, croque monsieur, quiche, and baked pasta. It also appears in fondue blends and slices well for sandwiches. Its mildness lets other ingredients lead.

Pairing Suggestions

Pair with a dry white from Savoie, a light Pinot Noir, or a crisp cider. Serve with cured ham, cornichons, walnuts, and a baguette.

Storage

Wrap in wax paper and store in the refrigerator crisper drawer. Keeps well for three to four weeks.
