Taleggio
Cheese Type: Soft, Soft Ripened
Country: Italy
Milk Type: Cow
Taleggio is an Italian washed-rind cheese from the Lombardy region, named after the Val Taleggio caves where it has been aged since at least the 10th century. It is one of the oldest soft cheeses in the world and carries a DOP designation.
Flavor Profile
Taleggio has a mild, tangy, and slightly fruity flavor with a buttery, meaty richness. Its aroma is much stronger than its taste, so do not let the smell deter you. The paste is soft, creamy, and becomes almost sauce-like when warmed. The thin, washed rind is edible and adds a pleasant earthy note.
How to Use Taleggio
Taleggio is a superb melting cheese that transforms risotto, polenta, pizza, and stuffed pasta. Stir it into risotto at the very end for a luxuriously creamy finish. It pairs exceptionally well with pear and walnut on pizza and makes an extraordinary grilled cheese sandwich.
Pairing Suggestions
Pair with medium-bodied reds like Barbera or Dolcetto. Taleggio also works well with fresh figs, honey, walnuts, and crusty Italian bread.
Storage
Wrap loosely in wax paper and consume within one to two weeks. Taleggio is best enjoyed while still soft and creamy.
