Sbrinz AOP

Cheese Type: Hard

Country: Switzerland

Milk Type: Cow

Sbrinz AOP is one of the oldest hard cheeses in Europe, produced in central Switzerland from raw cow’s milk. It carries the AOP (Appellation d’Origine Protégée) designation and must be aged for a minimum of 18 months, though many wheels are aged for 24 months or longer. It is often considered Switzerland’s answer to Parmigiano-Reggiano.

Flavor Profile

Sbrinz is extremely hard, dense, and granular with an intensely savory, concentrated flavor. The taste is deep, nutty, and complex, with a long finish that lingers on the palate. The extended aging produces small crystalline deposits that add a satisfying crunch. The flavor is more robust and assertive than most Swiss cheeses.

How to Serve

Traditionally, Sbrinz is not cut with a knife but broken into irregular shards using a special almond-shaped tool, and eaten with the fingers. This traditional serving method preserves the crystalline texture and concentrates the flavor experience. It can also be grated over pasta, risotto, and soups.

Pairing Suggestions

Pair with a full-bodied red wine, a dry Swiss white, or a strong espresso. Serve with dried fruits, dark bread, and honey.
