Pråstost
Cheese Type: Semi Firm
Country: Sweden
Milk Type: Cow
Prästost, meaning “priest cheese,” takes its name from a centuries-old Swedish practice in which parishioners paid their tithes to the local clergy in milk, which was then made into cheese at the parsonage. It is one of Sweden’s oldest documented cheeses.
Flavor Profile
Prästost is a semi-hard cow’s milk cheese with a firm, smooth paste and scattered small openings. The flavor is rich and full with a distinct tang and a savory, slightly sharp edge that sets it apart from milder Swedish cheeses like Herrgårdsost. Aged versions are washed with spirits during maturation, which adds a pungent, aromatic complexity.
How to Serve
Serve at room temperature, sliced thin, as part of a Swedish breakfast or smörgåsbord. Its assertiveness makes it a good cheese board choice where a milder Nordic cheese would fade. It melts well in gratins and baked dishes.
Pairing Suggestions
Pair with an aquavit, a dark lager, or a robust red. Serve with crispbread, pickled herring, whole grain mustard, and lingonberry jam.
Storage
Wrap in wax paper and store in the refrigerator crisper drawer. Keeps well for three to four weeks.
