Grevé
Cheese Type: Semi Hard
Country: Sweden
Milk Type: Cow
Grevé is a Swedish cheese created in the 1960s as a domestic interpretation of Swiss Emmentaler. The name derives from the Swedish word for count, continuing the tradition of naming Swedish cheeses after the nobility, as with Herrgårdsost and Prästost.
Flavor Profile
Grevé is a semi-hard cow’s milk cheese with a firm, supple paste marked by large round holes. The flavor is mild and nutty with a distinct sweetness, gentler and less complex than true Emmentaler but with the same essential character. Aged wheels develop a fuller nuttiness and a slightly firmer bite.
How to Use
Grevé melts smoothly, making it a good everyday choice for toasted sandwiches, gratins, and baked dishes. In Sweden it is commonly sliced thin with a cheese plane for breakfast and open-faced sandwiches. Its large holes and mild flavor make it accessible to almost everyone.
Pairing Suggestions
Pair with a light lager, a dry Riesling, or an unoaked Chardonnay. Serve with crispbread, cured ham, cucumber, and fruit preserves.
Storage
Wrap in wax paper and store in the refrigerator crisper drawer. Keeps well for three to four weeks.
