Shropshire Blue
Cheese Type: Semi Soft
Country: England
Milk Type: Cow
Shropshire Blue is, despite its name, neither from Shropshire nor especially old. It was created in Scotland in the 1970s and is now made in the same three counties permitted for Stilton production. Its vivid orange paste comes from annatto added to the milk.
Flavor Profile
The contrast between deep orange paste and blue-green veining makes it one of the most visually arresting cheeses on any board. The flavor is sharper and tangier than Stilton with a pronounced savory bite, a buttery richness, and a mineral finish. The texture is firm and crumbly, similar to Stilton in body.
How to Serve
Serve at room temperature on a board, where the colour makes it a natural focal point. Crumble it over salads and roasted vegetables, or melt it into sauces where the orange hue carries through into the dish.
Pairing Suggestions
Pair with Port, a Sauternes, or a robust red. Serve with pears, honey, walnuts, dark chocolate, and oatcakes.
Storage
Wrap in foil and store in the refrigerator, separated from milder cheeses. Best within two to three weeks.
