Gruyère

Cheese Type: Semi Hard

Country: France

Milk Type: Cow

Gruyère is a semi-hard Swiss cheese made from raw cow’s milk in the cantons of Fribourg, Vaud, Neuchâtel, Jura, and Berne. It is one of the most versatile cheeses in the world, prized equally for eating, cooking, and melting.

Flavor Profile

The flavor is nutty, slightly sweet, and complex. Young Gruyère (5-6 months) is smooth and mild. As it ages beyond 12 months, it develops a more assertive, earthy character with crystalline texture.

How to Use Gruyère

Gruyère is the foundation of traditional Swiss fondue, where it is often blended with Emmentaler for stretch. It melts into a smooth, glossy consistency without becoming greasy or grainy. Beyond fondue, it excels in French onion soup, croque monsieur, gratins, quiche, and on cheese boards.

Pairing Suggestions

Serve with lingonberry jam, fig preserves, or marmalades. Pair with a dry Riesling, Chardonnay, or a crisp Pale Ale. Gruyère also pairs beautifully with cured meats, cornichons, and crusty bread.

Storage

Wrap in wax paper, then loosely in plastic wrap. Store in the refrigerator crisper drawer at 45-50°F. Bring to room temperature 30 minutes before serving for the best flavor.
