Goat-Fresh Logs
Cheese Type: Soft
Country: Canada
Milk Type: Goat
Fresh Goat Logs are the most common form of young chèvre, shaped into cylinders for easy slicing and portioning. Made from goat’s milk and sold within days of production, they represent goat cheese at its freshest and brightest.
Flavor Profile
The flavor is clean, bright, and distinctly tangy with a citrusy lift and a light salty finish. The texture is soft, smooth, and spreadable, dense enough to slice cleanly with a wire or dental floss. There is none of the barnyard intensity that develops in aged goat cheeses, only fresh acidity.
How to Use
Slice rounds onto salads, particularly with roasted beets and walnuts. Spread on toast with honey, roll in herbs or crushed pepper for an appetizer, stuff into chicken breasts, or crumble over pizza and flatbread. Warm rounds briefly under a broiler for a classic French salad topping.
Pairing Suggestions
Pair with a Sancerre, a Pouilly-Fumé, or any crisp Sauvignon Blanc, whose acidity mirrors the cheese. Serve with honey, beets, walnuts, fresh herbs, and baguette.
Storage
Wrap tightly and refrigerate. As a fresh cheese, consume within seven to ten days of opening.
