Cheddar, Vintage
Cheese Type: Hard
Country: New Zealand
Milk Type: Cow
Vintage Cheddar refers to Cheddar aged for an extended period, typically well beyond a year, until it reaches full maturity. At this stage the cheese has shed most of its moisture and concentrated into something dense, crystalline, and powerfully flavored.
Flavor Profile
Vintage Cheddar is intensely sharp with deep savory, nutty, and slightly sweet layers. The texture is hard and crumbly, packed with tyrosine crystals that crunch between the teeth. The acidity is high and the finish is exceptionally long, unfolding in stages rather than arriving all at once. This is Cheddar at its most expressive.
How to Serve
Serve at room temperature, broken into rough chunks rather than sliced, so the crystalline texture is part of the experience. This is a cheese for slow eating and contemplation. Reserve it for the board rather than cooking, where its subtleties would be lost.
Pairing Suggestions
Pair with vintage Port, an aged single malt, or a powerful Cabernet Sauvignon. Serve with dried figs, walnuts, dark chocolate, and plain oatcakes that will not compete.
Storage
Wrap in wax paper and refrigerate. Vintage Cheddar is extremely stable due to its low moisture and keeps for months when properly wrapped.
