Havarti, Sharp

Cheese Type: Semi Hard

Country: Finland

Milk Type: Cow

Sharp Havarti is Havarti that has been aged well beyond the young, mild stage, transforming the familiar buttery cheese into something considerably more assertive. Extended maturation dries the paste, concentrates the salt, and develops flavors absent in the fresh version.

Flavor Profile

Aging shifts Havarti from mild and creamy toward tangy and pronounced. The texture firms up and loses its springiness, becoming denser and more sliceable. The flavor develops a distinct saltiness with hazelnut and butterscotch notes underneath, and a sharp finish that lingers. It remains recognizably Havarti, but with far more to say.

How to Use

Sharp Havarti holds its own on a cheese board in a way that young Havarti does not, making it a good option when you want a Danish cheese with real presence. It still melts well, adding more flavor to grilled sandwiches and gratins than the mild version would.

Pairing Suggestions

Pair with a medium-bodied red, a Belgian ale, or an aquavit. Serve with dark rye bread, pickled herring, whole grain mustard, and apple slices.

Storage

Wrap in wax paper and store in the refrigerator crisper drawer. Lower moisture than young Havarti means it keeps for three to four weeks.
