L’Etivaz AOP

Cheese Type: Firm, Hard

Country: Switzerland

Milk Type: Cow

L’Etivaz AOP is among the most traditional cheeses in Switzerland, made only between May and October in the Vaud Alps by fewer than eighty families. The milk comes from cows grazing high mountain pasture, and the curd is cooked over an open wood fire in copper cauldrons, a practice protected by its AOP status.

Flavor Profile

The wood fire imparts a subtle smokiness that no industrial process can replicate. The paste is firm and dense with a deep golden color. The flavor is intensely complex: nutty and fruity with grassy alpine herbaceousness, a savory depth, and that gentle woodsmoke woven through the finish. It is markedly more layered than standard Gruyère.

How to Serve

Serve at room temperature on a board as a centerpiece, where the complexity earns attention. It is superb in fondue, though its cost means many reserve it for eating rather than melting. Present it with simple accompaniments that will not compete.

Pairing Suggestions

Pair with a Swiss Chasselas, a white Burgundy, or a Jura Vin Jaune. Serve with walnuts, dried apricots, dark honey, and rustic bread.

Storage

Wrap in wax paper and store in the refrigerator crisper drawer. Low moisture makes it stable for a month or more.
