Le Gruyère Reserve AOP

Cheese Type: Firm, Hard

Country: Switzerland

Milk Type: Cow

Le Gruyère Reserve AOP is Gruyère selected for extended maturation, typically aged ten months or longer against the five-month minimum required by the AOP. Affineurs choose wheels that show the potential to reward additional time in the cellar.

Flavor Profile

Extended aging concentrates everything. The paste becomes firmer and drier, developing crystalline tyrosine deposits that crunch between the teeth. The flavor deepens well past standard Gruyère into pronounced nuttiness, browned butter, and a savory intensity with a faint fruity sweetness underneath. The finish is long and layered.

How to Serve

Serve at room temperature on a cheese board where the crystalline texture and depth of flavor are the point. Break it into rough pieces rather than slicing thin. It performs beautifully in fondue as well, though its price leads most people to reserve it for the board.

Pairing Suggestions

Pair with a Jura Vin Jaune, an aged white Burgundy, or a structured Pinot Noir. Serve with walnuts, dried apricots, dark honey, and rustic bread.

Storage

Wrap in wax paper and refrigerate. Very low moisture makes this exceptionally stable; it keeps for a month or more.
