Le Gruyère, Cave Aged, AOP

Cheese Type: Hard

Country: Switzerland

Milk Type: Cow

Cave Aged Le Gruyère AOP is matured in natural limestone caves, where consistent cool temperatures and high humidity allow the cheese to develop slowly and evenly. Cave maturation encourages surface flora that valley cellars cannot reproduce, and the difference is evident in the finished wheel.

Flavor Profile

Cave aging produces a moister, more supple paste than standard Gruyère of comparable age, along with a deeper aromatic complexity. The flavor carries pronounced earthy and mushroomy notes alongside the classic nuttiness, with a rich savory depth and a lingering mineral quality drawn from the cave environment itself.

How to Serve

Serve at room temperature on a board, where the added complexity distinguishes it clearly from ordinary Gruyère. It melts superbly and elevates a fondue considerably, but taste it on its own first to understand what the cave has contributed.

Pairing Suggestions

Pair with a white Burgundy, a Jura Savagnin, or a medium-bodied Pinot Noir. Serve with walnuts, mushroom conserve, dried fruit, and dark bread.

Storage

Wrap in wax paper and store in the refrigerator crisper drawer. Keeps well for several weeks.
