Emmentaler, Cave Aged, AOP
Cheese Type: Hard
Country: Switzerland
Milk Type: Cow
Cave-Aged Emmentaler AOP is a premium version of Switzerland’s iconic hole-studded cheese, aged in natural limestone caves for an extended period. The cave environment provides consistent cool temperatures and humidity levels that allow the cheese to develop deeper, more concentrated flavors than standard Emmentaler.
Flavor Profile
Cave aging transforms Emmentaler from a mild, sweet cheese into something more complex and robust. The flavor develops rich, nutty notes with hints of caramel and a pleasant tang. The texture becomes firmer and may develop small crystalline deposits that add a satisfying crunch.
How to Use Cave-Aged Emmentaler
This cheese works beautifully on a cheese board where its enhanced flavors can be appreciated alongside other Alpine cheeses. It melts well and adds depth to fondue blends, gratins, and baked dishes. Its robust character makes it an excellent match for charcuterie and dark bread.
Pairing Suggestions
Pair with a medium-bodied Pinot Noir, a dry Riesling, or a malty amber ale. Serve with dried fruits, walnuts, and whole grain mustard.
Storage
Wrap in cheese paper and store in the refrigerator at 45-50°F. Cave-aged Emmentaler keeps well for several weeks due to its lower moisture content.
