Juustoleipä
Cheese Type: Semi Hard
Country: Finland
Milk Type: Cow
Juustoleipä, known in English as Finnish squeaky cheese or bread cheese, is one of the most unusual cheeses in the world. The name translates as “cheese bread,” and it is baked or broiled until the surface caramelizes into characteristic brown spots, giving it the appearance of a flatbread.
Flavor Profile
Juustoleipä is mild, fresh, and faintly sweet with a light salty edge. What sets it apart is the texture: it does not melt when heated, instead softening slightly while producing a distinctive squeak against the teeth. The baked surface adds a toasted, caramelized note that contrasts with the fresh, milky interior.
How to Serve
The traditional Finnish preparation is to warm it and serve it alongside a cup of coffee, sometimes with the cheese dunked directly into the cup. It is also excellent drizzled with cloudberry or lingonberry jam, pan-fried until golden, or cubed into salads where it holds its shape completely.
Pairing Suggestions
Pair with strong black coffee in the Finnish manner, or with a light lager. Serve with cloudberry jam, lingonberry preserves, and fresh berries.
Storage
Wrap and refrigerate. Best consumed within a week, as this is a fresh cheese. It can be gently reheated before serving.
