Gouda, Raw Milk

Cheese Type: Firm

Country: Netherlands

Milk Type: Cow

Raw Milk Gouda is made from unpasteurized milk, which preserves the native bacteria and enzymes that pasteurization destroys. In the Netherlands this style is called boerenkaas, or farmer’s cheese, and it is made on individual farms from the milk of a single herd.

Flavor Profile

Raw milk produces noticeably more complexity than pasteurized. The flavor carries a fuller, more layered character with grassy and barnyard notes, a deeper savory depth, and a distinct sense of place that varies with season and pasture. The paste is firm and golden, and aged wheels develop pronounced caramel notes alongside crystalline crunch.

How to Serve

Serve at room temperature on a board, where the added complexity relative to standard Gouda is most apparent. Taste it alongside a pasteurized Gouda of similar age to appreciate the difference. It also melts well, though its character is best experienced uncooked.

Pairing Suggestions

Pair with a Belgian ale, a Bordeaux, or a Port. Serve with dark bread, mustard, walnuts, and dried fruit.

Storage

Wrap in wax paper and store in the refrigerator crisper drawer. Aged raw milk Gouda is very stable and keeps for a month or more.
