Tetilla

Cheese Type: Firm

Country: Spain

Milk Type: Cow

Tetilla is a DOP cow’s milk cheese from Galicia in northwestern Spain, named for its distinctive conical shape. It is among the most recognisable Spanish cheeses by silhouette alone, and it has been made in the region for centuries.

Flavor Profile

The paste is soft, smooth, and creamy pale yellow beneath a thin natural rind. The flavor is mild, buttery, and gently tangy with a clean milky sweetness and a slight salty finish. It is one of the gentlest Spanish cheeses, with none of the sharpness of aged Manchego or the intensity of Cabrales.

How to Serve

Serve at room temperature so the paste softens. Tetilla melts exceptionally well, making it a favorite for empanadas, grilled sandwiches, and Galician baked dishes. On a board it provides a mild counterpoint to stronger Spanish cheeses.

Pairing Suggestions

Pair with a Galician Albariño, a Ribeiro, or a light red. Serve with quince paste, honey, Marcona almonds, and crusty bread.

Storage

Wrap in wax paper and store in the refrigerator crisper drawer. Best consumed within two to three weeks of cutting.
