Switzerland Swiss

Cheese Type: Semi Hard

Country: Switzerland

Milk Type: Cow

Switzerland Swiss is Emmentaler produced in its country of origin, the cheese that gave the world its mental image of “Swiss cheese.” It takes its name from the Emme Valley in the canton of Bern, where it has been made since the 13th century.

Flavor Profile

Authentic Swiss Emmentaler is firm and pliable with large round eyes formed as propionic bacteria release carbon dioxide during maturation. The flavor is smooth and creamy with a mild nuttiness and a distinct sweetness, more pronounced and better developed than the mass-produced imitations made elsewhere. Well-aged wheels gain savory complexity.

How to Use

Emmentaler is an essential fondue component, providing the characteristic stretch that Gruyère alone cannot deliver. It shreds and melts beautifully for gratins, sandwiches, and baked dishes, and it works well on a cheese board as an approachable option.

Pairing Suggestions

Pair with a Chasselas, a dry Riesling, or a light Pinot Noir. Serve with whole grain bread, cured ham, apple slices, and cornichons.

Storage

Wrap in wax paper and store in the refrigerator crisper drawer. Keeps well for three to four weeks.
