Gouda, Extra Aged

Cheese Type: Hard

Country: Netherlands

Milk Type: Cow

Extra Aged Gouda sits at the far end of the Gouda aging spectrum, matured long past the point where most cheeses are sold. At this stage it bears almost no resemblance to the mild young cheese it began as, having concentrated into something dense and powerfully flavored.

Flavor Profile

The paste is hard, dry, and deep amber, packed with crystalline tyrosine deposits that crunch audibly. The flavor is intensely concentrated: deep caramel and toffee layered over a savory, almost meaty umami depth, with a salty edge and a finish that unfolds in waves rather than arriving at once. It rivals aged Parmigiano for sheer intensity.

How to Serve

Serve small portions at room temperature, broken into shards. This is a cheese for slow appreciation at the end of a meal rather than for cooking, where its nuance would be wasted. A little goes a long way.

Pairing Suggestions

Pair with vintage Port, an aged single malt, a Pedro Ximénez sherry, or an Imperial Stout. Serve with dark chocolate, dried dates, and toasted almonds.

Storage

Wrap in wax paper and refrigerate. Very low moisture makes it exceptionally stable, keeping for months.
